Sorghum (100%) Cookies with Groundnut Grits

Ingredients

  • Butter - 100 g
  • Caster sugar - 200 g
  • Eggs - 2
  • Vanilla essence - 1 teaspoon
  • Sorghum flour - 300 g
  • Groundnuts (chopped) - 100 g
  • Sodium bicarbonate - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Lime - 1

Method

Mix sorghum flour, baking powder, sodium bicarbonate, and salt thoroughly. Rub in the butter. Cream sugar and egg, fold in sorghum flour, and add vanilla essence, and lime juice. Make into a stiff dough. Roast groundnuts, clean and chop into grits, and mix the dough. Roll out the dough. Cut with a biscuit cutter into desired shapes. Bake at 350 F for 10 min.
